Heat gets the attention, but for most industrial chilli buyers colour value is the parameter that decides the price.
Ask a new buyer what they want from a chilli and they will usually talk about heat. Ask a processor and they will talk about colour.
Two different products
Teja S17 runs 75,000 to 90,000 SHU with an ASTA colour value around 35 to 45. Byadgi runs 8,000 to 15,000 SHU with ASTA of 70 to 90. They are both dry red chilli and they serve almost entirely different purposes.
Where colour matters
Oleoresin extraction is priced on colour yield. So is much of the prepared-food trade, where a deep red is wanted without adding heat. In those applications a high-SHU chilli is the wrong raw material at any price.
Blending
Many buyers end up contracting both and blending to a target. If that is your situation, contract them separately against their own parameters rather than asking for a pre-blend — you keep control of the ratio as your product mix changes.
